Begin by heating a grill pan over medium-high heat. Pour a tablespoon of olive oil over chicken breasts, season with salt and pepper. Sprinkle Italian seasoning over the chicken and place the chicken on the grill. Cook each side for 3 to 5 minutes per side, or as you like it. After chicken has been cooked, top it with a slice of mozzarella cheese. Top each breast with thinly sliced basil, a slice of tomato, and pepper to taste. Serve it with balsamic vinegar and you are ready to relish your chicken caprese.
